I have a 1979 kz1300 with the ‘full speed’ speedo and the US one that only goes to 50-60 mph.
I wonder if the 2 speedos interchangeable?
Can I put a 50-60mph onto my bike and get a true reading, changing the clock face ?

i don’t know the answer to your question but I’ve got a US speedo fitted to mine which I would be more than happy to swap?

I guess my real question is if the difference is really about the gearing at the other end of the cable, or if the difference is at the instrument end?

Instruments will swap no problem.  The speedo drive by the wheel is identical across models- all the "magic" happens in the gauge itself.  My 1980 is bone-stock EXCEPT for the speedo.  I dropped in one of the 160mph ones from a '79 because I was tired of maxing my old one out all the time.

A couple screws for the pod and then the gauge itself, and you're good.

I guess it depends on that you want to do.  Either instrument will give you the accurate reading consistent with that gauge.  Unless you're swapping just faceplates, which is a whole 'nother kettle of fish.
